Bamboo Shoots in Coconut Milk

                In the Philippines, bamboo shoots could mostly be bought at the market during the rainy season so I was actually amused knowing bamboo shoots were sold in cans and almost available regardless of season here in U.K. (so long as the Asian Stores never ran out of stocks of course).  

Ingredients:

coconut milk in 14 oz can

bamboo shoots  in 500 grams can (drain water before adding)

shrimp 200 grams (preferably peeled, cooked and frozen ones)

whole water chestnuts in 225 grams can (drain before adding)

1 large onion chopped

3 cloves minced garlic

ginger (peel and slice into small sticks)

½ teaspoon salt  or depends on your taste

1 cup water

Procedure:

In a cooking pot place 1 cup water and add the onion, garlic, ginger, shrimp and chestnuts. Bring to boil in moderate heat while stirring occasionally. After 3 minutes boiling add bamboo shoots and the coconut milk, cover and simmer for 10 minutes. Add salt to taste and serve with rice.

    I seldom use bamboo shoots because they are so tastless but I will try this one.

    Whoever is allergic to shrimps, they could omit it and the taste will not change much. I’m afraid this recipe doesn’t go well with wine.Thanks for all your comments, everyone.
