Cajun Spiced Potato Wedges

A fast and simple to make Cajun twist to spice up a lazy midweek meal.

Cajun Spiced Potato Wedges Ingredients:

  • 900g of New Potatoes
  • 3 Tablespoons of Olive Oil
  • 1-2 Teaspoons of Cajun Spice Blend
  • 1 Teaspoon of Dried Crushed Thyme
  • 1 Teaspoon of Crushed Dried Rosemary

Method:

  1. Wash unpeeled new potatoes
  2. Cut unpeeled new potatoes lengthwise into same-sized wedges
  3. Into a large mixing bowl add the olive oil, the crushed dried thyme and the crushed dried rosemary and the Cajun blend spice mix and mix well
  4. Now add the potato wedges and stir well to ensure all of the potato wedges get an even coating of spicy oil mixture
  5. Alternatively, you can use a plastic bag into which you add the olive oil, the spices and the herbs. Then give it a stir before adding the potato wedges. Tie off the bag and give it a good shake to coat potato wedges with the olive oil and spicy herb mixture.
  6. Transfer coated potato wedges in a single layer onto a baking tray and place on top shelf of an oven preheated to 2200C and bake for 20-25 minutes or until the wedges become tender and golden brown
  7. Serve when ready

Serving:

Serve alone or as a side-dish

These Cajun spiced potato wedges are a really great compliment to many other Cajun dishes such as Cajun spiced meatballs topped with a basic tomato pasta sauce, a sprinkling of chopped parsley and servings of toasted crispy garlic bread
