Champagne Antipasto

This a light and healthy appetizer or entree for the summer months.
You can typically made this recipe with just vegetables however, if you are a meat lover, add some Capicola, Salami, Mortadella, chicken, or turkey.
It’s very simple and the measurements can be played with as you will soon see.
Ingredients
- 1 cup Artichoke quarters
- 1 cup sliced Roma tomato
- 1 cup Caramelized Red Onion
- 1 cup cubed Feta
- ½ cup sliced Red Pepper
- ½ cup sliced Yellow Pepper
- ¾ cup of Kalamata Olives, Manzanella Olives, or Black Olives
Dressing
- 1 ½ cup of Champagne Vinegar
- 1 cup of Amber Honey
Method
- Toss all of your vegetables together and set aside in the frig.
- Mix your dressing with a whisk until smooth. Add honey in a steady stream while whisking dressing.
- Combine the two.
It’s just that simple.
If you would like to add other your meats at this point, please do so. Make sure all of your cuts are uniform.
