Chilled Avocado Sauce with Pasta

A delicious, refreshing, and quick recipe perfect for those summer months when you’d rather not spend all of your time in the kitchen. Can be made in 20 minutes or less!

Ingredients

*Avocado

*Plain Greek Yogurt

*Fresh Parsley

*Extra-virgin Olive Oil

*Sea Salt

*Crushed Garlic

*Farfalle Noodles (The kind that look like bow-ties)

*Fresh Vine-ripened Tomatoes

*Lemon Juice

Now Let’s Get Cooking!

~To start off, put a pot of water on the stove. This is going to be for noodles, so the size of the pot depends on how much you want to make

~Now Cut open the avocado and scoop all the gushy green insides into your food processor

~Add equal amount of avocado, yogurt, and olive oil to food processor

~Throw in a handful of parsley, a squirt of lemon juice, a generous dash of salt, and about a teaspoon of garlic

~Puree until smooth

~By now your water is probably boiling, so throw in a bit of salt and pour in your noodles. Cook according to package directions.

~While your noodles are cooking, use the time to dice up some tomatoes.

~When the noodles are done, drain the water off and then toss them with a bit of margarine so they don’t get sticky. Scoop them into bowls, top with avocado sauce mixture, diced tomatoes, and some chopped parsley for presentation

~Voila! It looks pretty, tastes great, and took barely any time at all. Enjoy!
