Crispy Tilapia

So good and easy to throw together for a delicious main course. The secret is in the recipe.

For a healthy fish dinner try this delightful way of preparing Tilapia. The recipe is easy and brings a little life to the mild flavored fish.

Ingredients

  • 4 Tilapia fillets 6 oz each
  • 6 cups potato chips finely crushed.
  • 2 cloves of garlic minced
  • 1 tsp of fresh  or dried dill
  • 2 tbs chopped Italian flat leaf parsley
  • 1/3 cup light mayonnaise
  • 2 tsp spicy brown mustard
  • Lemon wedges.

Method

  1. Preheat oven to 425 degrees.
  2. coat baking sheet with cooking spray.
  3. Combine crushed chips with 1 tbs parsley and 1 tsp dill.
  4. In a small bowl combine mayonnaise, mustard, garlic and remaining  parsley.
  5. Place Tilapia fillets on baking sheet and spread mayonnaise mixture on top of fillets and sprinkle the chip mixture on top of each fillet.
  6.  Pat lightly to adhere and spray each fillet with cooking spray.
  7. Bake 10 to 12 minutes or until golden brown.
  8. Garnish with lemon wedges and serve with oven roasted green beans on the side.

    Mmmm…tilapia is such a wonderful light fish. And who doesn’t love crispy? Good work.

    Tilapia, now the staple fish of Filipinos. I will definitely try this one.
