Healthy Eating Crustless Zucchini Pie for Microwave
Size of pan/pot: 26 round Pyrex Grease: Yes
(for microwave)
Ingredients:
- 6 zucchini, diced
- small onion, chopped
- 2 tomatoes, chopped
- 1/4 green pepper, chopped
- 4 eggs
- 1/2 cup grated cheese (Parmesan preferred)
- Pinch of nutmeg
- Vegetable oil
- Salt, pepper to taste
- 1/2 cup bread crumbs
Preparation:
- In large bowl, mix together zucchini and onion, and cook, covered, in microwave 6 minutes (do not overcook). (Alternate: place zucchini and onion in a pot, with a little water, and cook on stovetop until just tender).
- Add chopped tomatoes, pepper, eggs, cheese, and all seasonings.
- Lightly grease dish (Pyrex),cover bottom with bread crumbs, and pour mixture over crumbs.
- Cook, uncovered, in microwave, at medium heat, 7 minutes (time depends on strength of oven).(In conventional oven: bake 25 minutes at moderate heat).
