Healthy Eating Crustless Zucchini Pie for Microwave

Size of pan/pot: 26 round Pyrex Grease: Yes
(for microwave)

Ingredients:

  • 6 zucchini, diced
  • small onion, chopped
  • 2 tomatoes, chopped
  • 1/4 green pepper, chopped
  • 4 eggs
  • 1/2 cup grated cheese (Parmesan preferred)
  • Pinch of nutmeg
  • Vegetable oil
  • Salt, pepper to taste
  • 1/2 cup bread crumbs

Preparation:

  1. In large bowl, mix together zucchini and onion, and cook, covered, in microwave 6 minutes (do not overcook). (Alternate: place zucchini and onion in a pot, with a little water, and cook on stovetop until just tender).
  2. Add chopped tomatoes, pepper, eggs, cheese, and all seasonings.
  3. Lightly grease dish (Pyrex),cover bottom with bread crumbs, and pour mixture over crumbs.
  4. Cook, uncovered, in microwave, at medium heat, 7 minutes (time depends on strength of oven).(In conventional oven: bake 25 minutes at moderate heat).
