Eggplants Steaks in George Foreman Grill

Eggplant steaks seasoned with a special blend of spices cook in the George Foreman Grill and make a delicious vegetarian dish and alternative to steak. You won’t even miss meat!

Ingredients:

1 eggplant

Extra virgin olive oil

McCormick Grill Mates Montreal Steak Seasoning

Directions:

1.  Wash eggplant and cut into thick slices, at least 1 to 1-1/4 inch thick.

2.  Rub both sides with a little olive oil.

3.  Sprinkle both sides lightly with McCormick Montreal Steak Seasoning. This is a wonderful blend of coarse salt, coarse black pepper, garlic and other spices.

4.  Let eggplant slices sit for 10 minutes and preheat the George Foreman grill.

5.  Spray the grill with a little nonstick spray or brush lightly with olive oil and add the number of slices your grill can accommodate. Lower the cover and place the drip pan in place.

6.  Cook eggplant, checking and turning after 5 minutes. If necessary, baste with a little more olive oil or the drippings that collect to keep from sticking. Depending on how thick you cut the slices, they should be done between 10-12 minutes. Be careful not to overcook them. They should be fork tender and hold their shape well.

7.  When done, transfer your mock eggplant steaks to a plate and enjoy with your favorite side dishes. If you are cooking more, transfer to a platter in a warm oven while you cook the remaining eggplant on the grill.
