Fried Green Tomatoes

You aren’t considered a good GRITS, or girl raised in the South, until you have mastered the art of fried green tomatoes.

Ingredients

  • 1 cup of corn meal
  • 1 tsp of salt
  • 1 tsp of black pepper
  • 1/8 cup of sugar
  • 2 large eggs
  • Canola oil
  • 2 lbs of green tomatoes
  • Cast iron skillet

Method

  1. Cut green tomatoes into ½ inch slices.
  2. Combine salt, sugar, corn meal, and black pepper in a small bowl.
  3. In a separate bowl, lightly beat eggs.
  4. Fill cast iron skillet with a ½ inch of oil; heat to 360 degrees.
  5. Dip tomatoes in the egg. Allow excess to drip off.
  6. Dip the egg dipped tomatoes into cornmeal. You may need to press cornmeal into grooves and cracks.
  7. Fry tomatoes (in small batches) for four minutes; flip and fry another 4 minutes.

Serve!

Notes:

For traditional extra crunchy fried green tomatoes, replace the egg wash with ½ cup of buttermilk. Then, follow the same steps without the eggs.

You can garnish with parsley, chives, bacon, parmesan cheese, and/or pepper vinegar.

    I had these a few years ago when we had WAYYY too many tomatoes than we knew what to do with – pretty good as I recall, since then we havent had the surplus, but maybe this year..
