Hearty and Spicy Vegetarian Chilli
This dish is so hearty that even the carnivores won`t miss the meat.
Ingredients
- 2 tbsp Extra Virgin Olive Oil
- 2 cans Kidney Beans (one white and one red)
- 1 cup chopped Celery
- 1 cup diced Green Pepper
- 1 small can Corn kernels, drained
- 1 cup diced Onion
- 1 ½ cups chopped Zucchini
- 2 cloves minced Garlic
- 2 tbsp Chilli seasoning
- 1 tbsp Cayenne pepper
- 1 large can of Diced Tomatoes
- 1 can Tomato Sauce
- Salt and Pepper to taste
Method
- In a large pot, saute garlic and all vegetables except zucchini and corn until tender
- Add zucchini and cook until tender
- Add remaining ingredients and simmer for 1-1 ½ hours
This dish is also nice served over rice

It’s great to find someone else who likes meatless dishes. I sometimes make vegetarian chili and add in “just like ground” soy protein, for extra flavor + some Louisiana Gold hot sauce.
One of my favorite dishes is barbequed tofu strips. These taste just like chicken.

I love veggies, just plain steamed ones too. I would love to try this one out too, but i did not get step 3, what is remaining? I think you forgot to mention some ingredient, or the article got messed up while publishing? It happened to my articles twice, once the sequence got jumbled, and the other time the last half never got published!

Rookie Expert. That means all of the spices and seasonings that were not mentioned in step 1 & 2. Because it is all vegetables, if you put the herbs in too early they can become overpowering.

Interesting recipe. However, I don’t like the green pepper. Green pepper has no nutritional value and it doesn’t add to the taste at all. Just from a Chef’s point of view.

On the contrary, peppers are very nutritious.

Non nutritious may have been too strong a word.
When consuming a vegetable with Vitamin A it should have at least 10% to be a good source of nutrition.
Red Peppers have 3 times more Vitamin C than Green Peppers. Greens peppers can be nutritious if eaten in large quantities. You would have to replace all of your daily fruit with them to get your Vitamin C for the day.
As for Iron, peppers don’t meet the percentage either as opposed to broccoli, spinach, kale, Collards, asparagus, and dandelion greens.
I still like the recipe even though I’m not a vegetarian.

Pretty close to my recipe but I add Trader Joes soy meatballs crushed up in it.
