Herb and Asparagus Frittata

A twist on the traditional Frittata, this dish can be eaten hot or cold and made vegetarian by omitting the smoked ham.

Ingredients

  • one dozen eggs
  • 2 tbsp butter
  • 1/8 cup cream
  • 4 oz Smoked Ham diced
  • 1 cup Parmesan cheese
  • ½ pound Asparagus trimmed and diced
  • ½ cup chopped Green Onions
  • 2 tbsp minced Red Pepper
  • 1 tbsp chopped fresh Thyme leaves
  • 1 tbsp chopped fresh Tarragon leaves
  • Salt and fresh ground Pepper
  • 2 tbsp Extra Virgin Olive Oil (optional)

Method

  1. Break eggs into a large bowl and beat together with cream, Thyme, Tarragon, chives, salt and pepper and cheese. Set aside
  2. Heat butter in an oven safe non-stick fry pan until it starts to sizzle
  3. Add Asparagus and ham and cook for 2-3 minutes. .
  4. Add green onion and cook 1 minute more
  5. Pour egg mixture into fry pan
  6. Reduce heat to low and cook about 5 minutes or until the bottom of the Frittata is firm
  7. Place in pre-heated 350* oven 8-12 minutes until fully set
  8. Loosen edges with a spatula and turn out onto large plate or serving platter. .
  9. Garnish with finely chopped chives and drizzle with Extra Virgin Olive Oil (optional)

    Great recipe, I love frittata’s! I probably will replace the ham with smoked turkey =)

    I love frittatas, too. I’m always looking for new ideas to try making one.
