Making zippy onion chutney is so simple and the results so rewarding.

Onion chutney is a wonderful easy to make condiment that can be used in untold numbers of ways including on sandwiches and rolls, as a table condiment or even as the basis for a really great dip.

Ingredients

  • 2 Large Brown Onions
  • 4 Tablespoons of Apple Cider Vinegar
  • 2 Tablespoons of Butter
  • 1 Teaspoon each of Brown Sugar and Ground Coriander
  • ½ Teaspoon of Red Chili Flakes
  • ¼ Teaspoon each of Freshly Ground Sea Salt and Freshly Cracked Pepper

Method

  1. Finely dice the onions
  2. Use a non-stick pan over a medium heat to melt the butter
  3. Then add the onions and sauté until they become translucent
  4. Stir in the freshly ground sea salt, chili flakes and coriander. Continue cooking and gently stirring for another 15 minutes or so. You don’t want the onions to stick to the bottom of the pan.
  5. Add the remaining ingredients and continue cooking until the onions become very soft and creamy. Remember to keep gently and slowly stirring all the while.

Serving

Transfer onion chutney from pan to a small covered bowl or better still a small glass jar with a screw top lid. Store refrigerated will prolong table life. This onion chutney can also serve as a basis for a really zippy onion and sour cream dip.

Enjoy!
