How to Make Vegan Burgers
A quick and simple way to make tasty tofu burgers suitable for vegetarian and vegans.
- 300g extra firm tofu,well drained.
- 1 1/2 cups finely chopped mushrooms.
- 1 1/2 cups of finely chopped red onions.
- 1/2 cup of tomato paste.
- 1 1/2 cups breadcrumbs.
- 2 bulbs of roasted garlic.
- 3 tbsp dried savory.
- 2 tsp mustard (strength to taste).
- 1 tsp dried oregano.
- 2 tbsp soy sauce.
- 1 tsp chilli powder.
- 1 tbsp olive oil.
- A pich of salt.
- A pich of pepper.
Sauté the onions in the olive oil (medium heat) for about 4 minutes,add the salt and pepper. Add the mushrooms and 1 tbsp soy sauce (or tamari) Sauté again until the onions soften (about 4 minutes) Remove from heat.
Place the chunks of tofu into a food processor and purée until very finely minced. Squeeze the garlic from the bulb and add the mixture that you have sautéed,now add all the other ingredients.
The mixture should hold when presure is applied, add more breadcrumbs if the mixture does not hold.
Using your hands,shape the mixture how you like, depending on how thick or big you make each burger this mixture will make 8-10.
Fry in a pan coated with olive oil for about 7 minutes each side until lightly browned.
