Jasmine Rice with Mixed Vegetables
Here is my recipe for Jasmine rice with mixed vegetables.

Sometimes husbands have to go grocery shopping. If they help in the kitchen, they know exactly what to buy. If they do not help in the kitchen, their wives have to write a grocery list for them. Most of the time, husbands get it right. They even call from the supermarket when they have questions about a product.
One of those times that my husband went grocery shopping, he could not find several things. He called and with my approval, he bought Jasmine rice. I cooked this rice for a week and I decided to call my best dish “Jasmine rice with mixed vegetables “. Here is the recipe.
Ingredients
- 2 cups of Jasmine rice
- 3 1/2 cups of water
- 1 teaspoon of oil
- 2 teaspoons of Sofrito Goya
- 2 packets or teaspoons of Sazon Goya
- 1 teaspoon of salt
- 1 box Birds Eye Classic Mixed Vegetables (10 oz.)
Note: You can find most of these ingredients in the ethnic section of your local supermarket.
Method
- Turn on the stove on high. Put a pot on it and pour the oil and the Sofrito Goya in the pot.
- Wait one minute and add the Jasmine rice, the salt, and the Sazon Goya. Mix all these ingredients in the pot and then add the water.
- Lower the temperature to medium and wait until the water evaporates.
- With a big spoon move the rice that is at the bottom of the pot to the top of the pot.
- Cover and lower the temperature to low.
- Cook for 10 minutes.
- Again, with a big spoon move the rice that is at the bottom of the pot to the top of the pot.
- Add the mixed vegetables.
- Cook for 10 minutes.
- Take a teaspoon of rice. Let it cool down, for a minute. Press the grains of rice with your fingers. If the rice is soft entirely, then is ready to serve. If it is a little bit hard cook for 10 more minutes. Then it should definitely be ready to eat.
This dish is delicious and you can serve it with seafood on the side. Enjoy!
