Leek Koftas Recipe

These luscious leek koftas have a rich and savory taste, that will have Your mouth watering long after they are gone. Leek Koftas are a healthy alternative too beef koftas and they are also the perfect little dish to serve with some spaghetti or pasta. There wonderful taste is delectable.
- 1-1/2lb leeks (trimmed and thinly sliced)
- 6oz feta cheese (crumbled)
- 3 eggs (beaten)
- 2oz fresh breadcrumbs
- 4 tablespoons vegetable oil
Start by steaming the leeks for about 4 minutes in a colander or steamer, over a pan of boiling water. Remove the leeks from the heat and leave to cool. In a large bowl, combine the cooled leeks, feta cheese, eggs and breadcrumbs.
Using a tablespoon of the mixture at a time, mould it into round patties with your hands. Next heat the oil in a shallow frying pan over a high heat. Fry the paties for about 5 minutes on each side or until they are a golden brown, cooking in batches if necessary. Finish by draining excess oil on kitchen paper, and serve warm
