Side dish suggestion: Spinach Salad

Ingredients

  • 1 Tbs. olive oil
  • 2 Tbs. lemon juice
  • 1 medium red bell pepper, cut into strips
  • 1 large onion, chopped
  • 1 pkg (8 oz.) Fresh mushrooms, sliced
  • ½ lb. lean fully cooked ham, cut into julienne strips
  • 1 pkg (10 oz.) Frozen peas, thawed
  • 1 pkg (6 oz.) Frozen snow peas, thawed
  • 1 can (5 oz.) Evaporated skim milk
  • ½ cup shredded Provolone cheese, divided
  • 8 oz Pkg. Linguine
  • Black pepper

Method

In large skillet, heat olive oil and lemon juice. Add bell pepper, onion, and mushrooms; cook and stir until tender-crisp. Add ham, peas, milk and 1/4 c. cheese; heat through, stirring frequently. Keep warm. Meanwhile, prepare linguine according to package directions; drain & place hot noodles in a large bowl. Top with vegetable mixture & toss to coat. Top with remaining 1/4 c. cheese. Serve immediately with black pepper.
