Linguine Primavera

Ingredients
- 1 Tbs. olive oil
- 2 Tbs. lemon juice
- 1 medium red bell pepper, cut into strips
- 1 large onion, chopped
- 1 pkg (8 oz.) Fresh mushrooms, sliced
- ½ lb. lean fully cooked ham, cut into julienne strips
- 1 pkg (10 oz.) Frozen peas, thawed
- 1 pkg (6 oz.) Frozen snow peas, thawed
- 1 can (5 oz.) Evaporated skim milk
- ½ cup shredded Provolone cheese, divided
- 8 oz Pkg. Linguine
- Black pepper
Method
In large skillet, heat olive oil and lemon juice. Add bell pepper, onion, and mushrooms; cook and stir until tender-crisp. Add ham, peas, milk and 1/4 c. cheese; heat through, stirring frequently. Keep warm. Meanwhile, prepare linguine according to package directions; drain & place hot noodles in a large bowl. Top with vegetable mixture & toss to coat. Top with remaining 1/4 c. cheese. Serve immediately with black pepper.
