There are plenty of recipes for the use of zucchini. There are breads, frying recipes, salads, etc. Zucchini
is so very good for the human body and easy to grow! The best, the very best use of zucchini is a home-made
zucchini pie. Here is the recipe. Keep in mind, you’re going to get lots of hugs and praise for this one!
Ingredients
- 4 cups peeled, sliced, diced zucchini
- 1-1/4 cup sugar
- 2 eggs, beaten
- 1/3 teaspoon salt
- 2 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1/4 cup flour
- 1/4 cup lemon juice (1/8 cup of vinegar may be substituted for lemon juice)
- You should also make (or buy!) pastry for a 2 crust pie.
Method
Preheat your oven to 400 degrees.
Mix all above ingredients in a large bowl and mix well.
Pour into unbaked pie shell and cover with top crust or strip crust.
Bake for 5 minutes at the 400 degrees, then turn the oven down to 350 degrees.
Cook approximately 1 hour longer or until zucchini is tender.
Cool. Cut. Serve.
