Low-Fat Vegetarian Stroganoff: Extra Smooth and Creamy
This low-fat vegetarian stroganoff is one of my favorites because it doesn’t taste low fat or vegetarian! It’s also really easy to prepare.
Note: This recipe is for low-fat vegetarian stroganoff, but you could easily substitute regular ingredients for the low-fat ones and hamburger or steak strips for the veggie crumbles, if you prefer.

Cook Time: 10 Minutes
Serves: 4
Ingredients
- 2 cans (10 3/4 ounces in each can) cream of mushroom soup (I like Campbell’s Healthy Request)
- 1 cup light sour cream
- 1 cup skim milk
- 12 oz faux beef crumbles (I like the MorningStar brand)
- 1/4 tsp onion powder
- 1/8 tsp cumin
- 1/2 tsp garlic
- 1/2 tsp thyme
- 1/2 tsp black pepper
- 1/4 tsp coriander
- 1 package (12 oz) extra wide noodles
Method
- Add cans of soup, sour cream, milk, and veggie crumbles into a large saucepan. Stir in the spices.
- Cook soup mixture over medium heat until fully heated.
- Boil noodles in separate pan according to the instructions on the package.
- Serve noodles with a good heap of sauce over them. Add a little black pepper on top, to taste. Mmm, yummy! Enjoy!

This recipe was to die for. My husband couldn’t stop eating, ate the whole pot of it, and was so stuffed he was sick. It was delicious…in moderation
