Mexican Veggie Burger

Delicious veggie burger recipe. You will love it!

Amazingly delicious alternative to the beef patty burger

Ingredients

  • 1 small skitake mushroom
  • 2 slices pepper jack cheese
  • 1 slice of tomato
  • shredded lettuce.
  • sliced onion
  • sliced avacado
  • 1 roasted ortega chili  (optional)
  • 1 whole grain hamburger bun
  • 1/4 cup ranch salad dressing.

Method

  1. Grill shitaki mushroom about 3 minutes on each side.
  2. Add pepper jack cheese on top for the last 2 minutes on the grill.
  3. Toast bun and spread some of the ranch dressing on the bun
  4. Top with shredded lettuce, onion slices and the tomato slice.
  5. Add the shitake mushroom “burger” topping it with avacado slices and 1 chile .
  6. Drizzle with the remaining ranch dressing and put the top peice of the bun on.
  7. Serve with totilla chips and salsa.
