Mixed Vegetables with Coconut and Mustard Seeds
A great vegetarian dish with grated coconut and mustard seeds. Tastes best if the coconut is freshly grated.You can use any vegetable available to make it.
Ingredients
- 1/2 kg mixed vegetable (potatoes,spinach,cauliflower,carrots,peas,peppers,mushrooms,courgettes or any other vegetables)
- 1 onion(chopped fine)
- 1 tomato(chopped fine)
- 2 green chillies(chopped)
- 3-4 tbsp freshly grated coconut
- 1 tsp mustard seeds
- 1 tsp red chili powder
- 1/2 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp cumin seeds
- a pinch of all spice
- 1tsp ginger/garlic paste
- 3-4 tbsp oil
- salt to taste
- fresh coriander leaves(chopped)
Method
- In a wok,heat oil and add all the mustard and cumin seeds until they start to splutter. Quickly add the onions.
- Cook the onions until brown and then add the tomatoes and cook until soft.Now add in all the remaining spices and sauté for a couple of minutes.
- Add in all the vegetables.Cook the vegetable on high heat mixing them well with the spices.
- Cover and cook till tender.
- Garnish with coriander leaves and freshly grated coconut. Serve hot.
