Mixed Vegetables with Coconut and Mustard Seeds

A great vegetarian dish with grated coconut and mustard seeds. Tastes best if the coconut is freshly grated.You can use any vegetable available to make it.

Ingredients

  • 1/2 kg mixed vegetable (potatoes,spinach,cauliflower,carrots,peas,peppers,mushrooms,courgettes or any other vegetables)
  • 1 onion(chopped fine)
  • 1 tomato(chopped fine)
  • 2 green chillies(chopped)
  • 3-4 tbsp freshly grated coconut
  • 1 tsp mustard seeds
  • 1 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp cumin seeds
  • a pinch of all spice
  • 1tsp ginger/garlic paste
  • 3-4 tbsp oil
  • salt to taste
  • fresh coriander leaves(chopped)

Method

  1.  In a wok,heat oil and add all the mustard and cumin seeds until they start to splutter. Quickly add the onions.
  2. Cook the onions until brown and then add the tomatoes and cook until soft.Now add in all the remaining spices and sauté for a couple of minutes.
  3. Add in all the vegetables.Cook the vegetable on high heat mixing them well with the spices.
  4. Cover and cook till tender.
  5. Garnish with coriander leaves and freshly grated coconut. Serve hot.
