Mock Crab Stuffed Celery
How to make your own mock crab filling – so simple and yet so sophisticated.

White celery can be as a result of naturally blanching varieties or now days more commonly as trench celery (mounds of earth are built up around the celery stalk as it grows resulting in white stalks).
A mock crab filling can be used in countless ways and this particular one is safe for dinners of all persuasions; the vegetarian and meat eater alike, but is so simple to make that it leaves me bewildered as to why so few people know how to do this. So let us start by making a basic mock crab filling/spread.
Mock Crab Filling/ Spread Ingredients
- 3 Tablespoons of Grated Matured Cheese
- 1 Tablespoon of Butter
- 1 Dessertspoon of Tomato Ketchup
- 1 Teaspoon of Worcestershire Sauce
Method
- Melt the butter then add in the grated cheese, the tomato ketchup and Worcestershire sauce and mix well.
- Combine all ingredients thoroughly and keep mixing until the mixture becomes a paste of even texture and color throughout. Your mock crab filling/paste is now ready for use.
If you are not going to use the entire mock crab filling immediately, store it in an airtight container in the refrigerator where it will keep fresh for quite some time.

- White Celery Stalks
Mock Crab Stuffed Celery Method
- Wash and trim the white celery
- Load mock crab filling into a piping bag and pipe into the celery stalks
- Keep chilled until ready to serve
Serving
You may serve the mock crab filled celery stalks as is or you may cut them into smaller bite sized sections and then insert a toothpick into each one as you place them on a serving platter ready for your guests.
To use the mock crab filling as a spread simply butter some onto water crackers, cheese crackers or savory crackers and serve on a platter with a selection of other savory snacks. It also makes a wonderful sandwich spread or roll filling.
My brother likes to spread it liberally on hamburgers and hot dogs; well actually he more like plasters it on.
