Orange Beetroot

This is a dish that is prepared in Cyprus and offered as part of the Mezes,a selection of dishes,there can be up to 20-30 are served to the welcome visitor to the table. Beetroot is served in a variety of ways, all coming from different family recipes, this dish is a sweet but tangy dish and compliments the Greek salad.

Ingredients

  • 450g of plain cooked beetroot
  • 150ml malt vinegar
  • 1 tablespoon corn flour
  • 225g dark brown sugar
  • Rind and juice of 3 sweet oranges

Method

  1. Cut beetroot into long strips (looks good) and put into an oven proof dish
  2. Heat vinegar and sugar in a pan over a gentle heat, simmer for 5 minutes
  3. Mix a little orange juice to the cornflour and make a paste
  4. Pour the rest of the juice into the simmering pan and continue simmering for another 5minutes
  5. Stir in the cornflour paste stirring, thickening the sauce
  6. Pour the sauce over the beetroot and warm in a preheated oven, 150c for 5 – 10 minutes
  7. This dish improves if left in fridge overnight and then heat and serve
  8. Garlic and cracked coriander seeds also compliment this dish

    We actually managed to grow beets this year (first year the deer didnt eat them). Sounds interesting!

    This sounds good, I usualy cook mine in a little vinegar but I will have to try it this way.
