Parmesan and Cheddar Crusted Garlic Sauteed Spaghetti Squash

Spaghetti Squash is the red-headed step child of all squashes.

I hated squash for most of my life, and when my mom used to put mashed butternut squash in front of me I used to “accidentally” knock the plate on the floor, but one time she gave me a plate with stringy spaghetti looking guys on it.  I ate it, and I was pleasantly surprised, and from that day on I’ve enjoyed squash. 

Spaghetti Squash is an underrated vegetable, and there aren’t too many recipes out there for how to make it, and I’d like to put those to rest.  So without further ado, here’s a delicious treat!

Ingredients

  • 1 Spaghetti Squash (Sliced in Half and deseeded)
  • 2 tsp.  Minced Garlic (Or 3 if that’s what you’re into)
  • 1 tbsp. Salt & Pepper
  • 1 1/2 tbsp. olive oil
  • 2 tsp. brown sugar
  • 2 tsp. sage
  • itsy bitsy pinch of cinnamon (or allspice)
  • 1 cup Parmesan cheese
  • 1 cup Cheddar Cheese
  • 1tblsp Parsley (more for looks than flavor)

Method

  1. Preheat Oven to 375
  2. Half and deseed Spaghetti Squash
  3. Use half the Olive Oil and rub the inside surface until thoroughly covered
  4. Use half the salt and pepper to coat the inside surface
  5. Once oven’s up to heat – put Spaghetti Squash face down in baking dish and insert in oven
  6. SQUASH WILL COOK FOR 45 MINUTES!!!!!  When you can stab through the back of the squash with a fork easily, it’s done.
  7. Remove squash from oven and set aside

  8. Heat stove to Medium-high
  9. Pour in the rest of the oil
  10. Saute Garlic in oil until it starts to turn brown
  11. Scrape the Spaghetti strands from the squash into the garlic oil
  12. Combine remaining salt, sage, brown sugar, pepper, and the smallest pinch of cinnamon you can muster
  13. Saute until the Squash has lost some moisture and is closer to a real spaghetti consistency

  14. Turn Oven to Broil
  15. Transfer sauteed Squash to a smaller baking dish and coat evenly with Parmesan, Cheddar, and Parsley
  16. Place in oven for 5 minutes or until cheese is browned

Cook Time: 45min-1hr for the squash to bake  -  20 minutes to saute and broil

When it’s done just scoop some on your plate, it’s great topped with a little pasta sauce, or as a side for steaks, chicken, and pork.  A good pairing is Carrots due to their sweetness, or conversely steamed broccoli could also go well with it.  But by adding the little bit of brown sugar and cinnamon it adds a little to the natural sweetness of squash and makes it a more accessible vegetable for children.  And it’s fun to play with!  Enjoy.
