Quick and Easy Veggie Quesadilla
A tasty way to add whole grains, greens, and antioxidants to your diet.

Ingredients:
1 Large whole grain tortilla
1 cup fresh, chopped spinach
1/2 cup chopped tomato
1/2 cup grated cheddar or Jack Cheese
Non-stick pan
Method:
- Pre-heat a non-stick pan over medium heat.
- Lay the tortilla flat in the pan.
- One one half of the tortilla, layer half of the cheese, the spinach and the tomato, followed by the remaining cheese. Fold over. Cook quesadilla until lightly toasted on one side. Turn the quesadilla over, cover with a lid and cook until it is lightly browned on the second side.
- Remove from pan and serve hot with salsa, non-fat sour cream or guacamole and Mexican Caesar Salad.
