Soul Food: Classic Corn Fritters
Simple-to-make Classic Corn Fritters are tasty bites the entire family will love. Perfect made with fresh corn, Classic Corn Fritters can be made with frozen corn as well.

Note: Corn Fritters can be frozen after cooking and rewarmed gently.
Ingredients:
*2 c corn kernels or creamed corn, run through the food processor
*2 eggs, separated
*2 tbs flour
*2 tbs softened butter
*salt, pepper, nutmeg to taste
*oil for frying
Preparation:
Mix the corn, beaten egg yolks, flour, butter, salt, pepper and nutmeg in a large bowl. Whisk the egg whites to soft peaks and fold into the mixture. Do not over mix. Add a little flour if the batter is too liquid.
Heat the oil to 375 F. Drop spoonfuls of the batter into the hot oil. Fry for 2–3 minutes until light browh, turning the Corn Fritters occasionally. Drain on paper towels and serve hot.
Corn Fritters are a great vegetarian main dish served with Tomato Chutney, Orange and Red Onion Salad, Cucumber Yoghurt Salad, Fresh Tomato Salsa.
