Spicy Chili-yogurt and Mushroom

Tasty vegetable with chili, yogurt and mushroom. Turmeric based and good for you. Add turmeric and spices and cook it to perfection in just twenty minutes.

This dish will serve four.

Ingredients.

Four table spoons of Olive oil.

Two large onions, chopped.

Four garlic cloves crushed.

Fourteen ounces of canned chopped tomatoes.

One table spoon of ground turmeric.

One table spoon of garam masala.

Half table spoon of chili powder.

One pound of sliced mushrooms.

Pinch of sugar.

Salt.

Half cup of plain yogurt.

Chopped cilantro and cilantro springs to garnish.

Method.

Heat the olive oil in a large skillet over medium heat. Add the onion and cook, stirring frequently for five to six minutes until golden. Stir in the garlic and stir fry for an additional two minutes.Now add the tomatoes and the juices and also add turmeric, garam masala, chili powder and continue to cook for another three minutes. Now add the mushroom, sugar and salt to taste and let it cook for another eight minutes. Turn off the heat and stir in the yogurt a little at a time, beating it vigorously to prevent curdling. Garnish with cilantro and serve.

 It always helps to add salt with the mushrooms, this draws out the water from the mushrooms and makes the vegetables more interesting.
