Spicy Gram, Stir-fry-style recipe preparation is given below.

Spicy Gram, Stir-fry-style

 

Prep: 10 minutes

Cook: Around 30 minutes (not including time for gram)

Makes: 4 servings

 

2tbsp olive oil

1tbsp ground cumin

1 onion, sliced

2 garlic cloves, finely chopped

1 red chilli, finely chopped

4 cups cooked gram (chickpeas)

400g cherry tomatoes (or 3 cups diced tomatoes)

Salt to taste

125g (medium bunch) tender young spinach leaves

 

1. Heat the oil. Add cumin and sizzle for 1-2 minutes.

2. Add onion and stir-fry for 5-7 minutes. Stir in chilli and garlic, and continue to sauté for 2 minutes.

3. Mix in the gram and tomatoes, simmer for 20 minutes.

4. Add the spinach and stir to wilt. Serve hot with rice
