Spinach Stir Fry

Quick and easy to prepare, Spinach Stir Fry can accompany any meal.
Note: Spinach Stir Fry can be made with leafy kales as well. Vary it with some sliced mushrooms.
Ingredients
- 2 lb fresh leaf spinach, carefully washed and coarse stems removed
- 3 tbs peanut (or other vegetable) oil
- 2 cloves garlic, crushed with a pinch of salt
- pinch of sugar (optional)
- 2 tbs soy sauce
- 1-2 tbs oyster sauce (regular or vegetarian)
- toasted sesame seeds
Preparation
- Spinach can be very sandy so wash thoroughly in several changes of water. Snap off any coarse stems. Drain well to avoid splattering in hot oil.
- In a wok or heavy frying pan, heat peanut oil over high heat until it shimmers. Add the garlic and stir fry for about 30 seconds. Add the spinach and continue frying until the spinach is wilted. Toss in a pinch of sugar and the soy sauce and mix well. Drizzle over some oyster sauce and heat the mixture through. Turn onto a serving dish and top with some toasted sesame seeds.
Serve with freshly-cooked rice or cellophane noodles.
