Tasty Rice and Cheese Casserole

This hearty vegetarian meal or side dish is made from basic, usually “on hand” items.

Ingredients

  • 1 cup raw rice
  • 6 slices American cheese, torn into pieces
  • 1/2 cup chopped onions
  • 1 can stewed tomatoes
  • 1/4 cup cooking oil
  • 3/4 cup water
  • salt and pepper

Method

Grease a casserole dish (preferable one with a lid, since this will bake covered).  Combine all ingredients and place into dish. Cover and bake at 350 degrees for 1 hour.  Serve with salad or green beans.
