The Best Tomato Pie Ever

Are you wondering what to do with all those tomatoes you have from your garden? Maybe you’re just looking for something new to do with a tomato. Here’s a recipe that will surely fix that problem. Not only is it great tasting, but it’s quick and easy to make. Serve it at your next dinner party and I’m sure your friends will be asking for the recipe!

Even people who say they don’t like tomatoes might just fall in love with this pie. Of course, using tomatoes from a local farmer’s market or from your backyard, will do this pie the most justice. Flavor is always the key ingredient and sometimes the tomatoes at your local grocery store lack just that…..flavor. Generally, they are shipped green and ripen on the trip to the store. Tomatoes left to ripen naturally, of course will taste the best.

Whatever tomatoes you use, I’m sure you’re going to fall in love with this pie. It’s surprisingly different and sure to make a tomato lover fall in love with it. Above all, this recipe is so easy to make. If you’re looking for a less fat recipe, substitute ingredients with low fat ones. Personally, I like this one, fat and all.

Ingredients

  • 5 large tomatoes, sliced
  • 1 9” cooked pie shell
  • ½ cup mayonnaise
  • 2 cloves garlic
  • ¾ parmesan cheese, grated
  • Salt & pepper to taste
  • 8 saltine crackers (crumbled coarsely)
  • 3 tablespoons butter

Method

  1. Cook your pie shell.
  2. Place your sliced tomatoes into cooked pie shell.
  3. Mix all the remaining ingredients together, except crackers & butter.
  4. Spread this mixture over the tomatoes.
  5. Sprinkle the crackers over the top and dot with butter.
  6. Bake at 400 degrees for 30 minutes.

Eat and enjoy!

Preparation time is approximately 15 minutes.
