Vegetable Paella Recipe
A tasty meal for all the family, will serve three people.
Ingredients
- Celery
- Brown rice
- Stock
- Courgette
- Olive oil
- Onion
- Garlic
- Celery
- Tin of chopped tomatoes
- Pepper
- Sweetcorn
- Parsley
Method
- Heat oil in a pan slowly, add one thinly sliced onion, 1 clove of garlic and 2 sliced stalks of celery. For a few minutes let these gently cook.
- To the pan add 150g of rice and 650ml of stock; gently cook this for 15-20 minutes.
- Add 1 sliced pepper, the tin of chopped tomatoes, 200g of sweetcorn and 1 sliced courgette. Add a hand full of parsley and you are ready to serve.
