Vegetable Paella Recipe

A tasty meal for all the family, will serve three people.

Ingredients

  • Celery
  • Brown rice
  • Stock
  • Courgette
  • Olive oil
  • Onion
  • Garlic
  • Celery
  • Tin of chopped tomatoes
  • Pepper
  • Sweetcorn
  • Parsley

 Method

  1. Heat oil in a pan slowly, add one thinly sliced onion, 1 clove of garlic and 2 sliced stalks of celery. For a few minutes let these gently cook.
  2. To the pan add 150g of rice and 650ml of stock; gently cook this for 15-20 minutes.
  3. Add 1 sliced pepper, the tin of chopped tomatoes, 200g of sweetcorn and 1 sliced courgette. Add a hand full of parsley and you are ready to serve.
