Vegetarian Recipe: Russian Mushroom Salad

Mushroom lovers rejoice! Russian Mushroom Salad is a delicious appetiser or complement to any meal. It is a nutritious vegetarian recipe and easy to make.

 Mushrooms for Russian Mushroom Salad

Note: A mix of mushrooms will make Russian Mushroom Salad even more interesting.

Ingredients

  • 1 lb button mushrooms (or use a combination of any fresh mushrooms)
  • grated rind and juice of 1/2 a large lemon
  • 3 tbs sour cream/smetana (or creme fraiche); more to taste
  • salt and freshly-ground white pepper
  • chopped fresh chives and parsley to taste

Method

  • Clean the mushrooms, trim and slice thinly from the cap down to the stem. Place in a serving bowl. Mix in the grated lemon rind and juice. This will keep the mushrooms from discolouring. Add the sour cream and stir well; use more if needed. Season the Russian Mushroom Salad lightly with salt and white pepper.
  • Cover and chill for at least one hour. At serving time, stir the Russian Mushroom Salad again to mix in any juices the mushrooms have released. Adjust the seasonings if necessary. Sprinkle chopped chives and parsley on top and serve.
