Zucchini Patties with Fresh Herbs

Anyone who has ever planted zucchini grows that a single plant can often provide more than the average family can use in a season. These zucchini patties are a simple, delicious way to use them up.

Ingredients

  • 3 lbs shredded Zucchini (drained of it`s juices)
  • 1 medium carrot shredded
  • 3 tbsp very finely minced green onion
  • 2 tbsp very finely minced red pepper
  • ½ cup Parmesan or Romano Cheese (optional)
  • 1 tbsp finely chopped fresh Parsley
  • 1 tbsp finely chopped fresh Basil
  • 1 cup soft bread crumbs (fresh)
  • enough egg whites to make ½ cup
  • Salt and Pepper to taste
  • Dry bread crumbs

Method

  1. Preheat oven to 350*
  2. Spray a cookie sheet with non stick spray or coat lightly with vegetable oil
  3. Combine all ingredients except the dried bread crumbs and form into patties
  4. Coat patties in the dry bread crumbs and place on cookie sheet
  5. Bake 35-40 min. or until golden brown

*These are nice served warm with a salad for lunch and mini patties are a nice and inexpensive hors d’oeuvre.

    These sound good. I used to bread and fry zucchini but stopped when we became more concerned about healthy eating. This one sounds good. I will have to give it a try.
