Your Family Will Gobble Up Your Leftover Thanksgiving or Christmas Turkey Pie

This is my favorite recipe for the dreaded leftover turkey.

     I imagine that a lot of us will have leftover turkey after today. Here is one of my favorite ‘leftover recipes’.  

     Bone and freeze your leftover turkey within 1 or 2 days of cooking. Boil the bones to make a rich broth. This broth can be frozen also. This way your family will not have more turkey immediately after the Thanksgiving or Christmas holidays, and it can be used anytime within the next 6 months.

Family Turkey Pie

Ingredients

  • ¼ cup butter
  • ½ cup chopped green pepper
  • 1 cup chopped mushrooms
  • ½ cup thinly sliced carrots
  • ½ cup finely chopped celery
  • 1 cup chopped cauliflower
  • 1 cup finely chopped broccoli
  • ½ cup corn
  • ¼ cup flour
  • 1 ½ cups milk
  • 1 can (10 ¾ ozs.) can condensed cream of mushroom soup
  • ½ cup chopped ripe olives
  • 2 ½ cups shredded turkey

Method

Put butter, green peppers, mushrooms, carrots, cauliflower, celery, broccoli, and olives in skillet and sauté until tender. Remove veggies, and add flour to hot butter, stir till smooth and simmer about 3 to 5  minutes. Add milk and mushroom soup and stir till smooth. If mixture gets too thick, add some turkey gravy or broth. Add veggies, and corn. Season to taste. Serve over rice, noodles, biscuits, or toast.

OR, make a biscuit topping for the pie:

  • Preheat oven to 450 deg.
  • 2 cups biscuit baking mix
  • 2 tablespoons shortening or butter
  • 1/3 cup milk

Combine baking mix, shortening or butter and milk, and stir to make a soft dough. Shape into a ball and knead on a floured surface about 5 or 6 times. Pat the dough into a rectangle to fit an 11 x 7 baking dish. Place over hot filling and Cut 5 or 6 slits in dough. Bake for 15 to 20 minutes, or until topping is golden brown, and filling is bubbling.

This serves about 6
