Adobo – a Must Try Filipino Dish

This is a Filipino dish that everybody should try. If you’re religion won’t allow it, just use chicken.

Ingredients:

  • 1/2 kilo pork or chicken (or combination)

  • 1/2 head garlic, minced

  • 1/4 onion, diced

  • 1/4 cup soy sauce

  • 1/2 cup vinegar

  • 1 cup of water

  • 1/2 teaspoon paprika

  • 3 laurel leaves (bay leaves)

  • 2 tablespoons of cooking oil or olive oil

  • 1 tablespoons cornstarch dissolved in water

  • Salt and pepper to taste

  • 2 tablespoons water

Procedures:

  1. Heat 2 tablespoons of oil in a sauce pan or wok.

  2. Sauté the minced garlic and onions.

  3. Add the pork and/or chicken to the pan. Add water, soy sauce, vinegar, paprika and the bay leaves.

  4. Bring to a boil.

  5. Cover and simmer for 30 minutes or until meat is tender.

  6. Remove the pork and/or chicken from the sauce pan and brown them in oil on another pan.

  7. Add the dissolved cornstarch to the original sauce pan and mix till it’s thicken.

  8.   Put back the browned pork/chicken to the sauce.
  9. Add salt and/or pepper to taste

  10. Bring to a boil then simmer for an additional 5 minutes.

  11. Serve hot with the adobo gravy and plain rice.
