Apricot Salad

A yummy apricot salad that is a perfect snack, or the perfect fruit side dish.
Ingredients
- 2 small or 1 large box apricot jello
- 2/3 cup of water
- 2/3 cup of sugar
- 1 (8 oz.) pkg. cream cheese
- 2 small jars apricot baby food
- 1 (20 oz.) can crushed pineapple
- 1 (8 oz.) whipped cream
Method
Heat the jello, water, and sugar until the gelatin and sugar dissolve. Remove from heat and stir in cream cheese. Add baby food and pineapple (undrained) and set aside to cool. When cool, add whipped topping and pour into a 13×9x2 inch dish or mold to set. Sprinkle with nuts if desired.
