Bean and Rice Salad

Serve this great salad with a sandwich and some chutney. End with a vanilla pudding and fresh fruits.

Ingredients

  • 1 cup black eyed beans or white beans.
  • 1/4 cup basmati rice.

Dressing

  • ¼  cup thick curd.
  • ½ tsp. chilli powder.
  • ¼  cup peanut or any other nut.
  • Salt and pepper to taste.
  • 1 tsp. roasted and powdered cumin seeds. few lettuce leaves.
  • a handful of coriander leaves.

Method

Soak the beans overnight. Boil the beans until tender. Drain. Boil rice in salted water until done. Strain. and mix with the beans.

Whip the curd and add the rest of the ingredients.

Stir the cooked beans and rice into the dressing. Chill. Serve on a bed of lettuce. Sprinkle with coriander leaves.
