The breadfruit is one of Jamaica’s staple foodsThe fruit is boiled when ½ – to ¾ matured or roasted when fully matured .It is used as a staple and makes a good accompaniment for codfish and ackee.

Bread fruit Salad

The breadfruit is one of Jamaica’s staple foods. It was brought to Jamaica from Tahiti by Captain William Bligh on his second voyage to the South Pacific in 1793. His main reason for introducing breadfruit to Jamaica was to feed slaves.

The fruit is boiled when ½ – to ¾ matured or roasted when fully matured .It is used as a staple and makes a good accompaniment forcodfish and ackee. People have been experimenting with this fruit and have come up with, chips, porridge, and punch However It does make a lovely salad that rivals the traditional potato salad. Here is a recipe.

Ingredients

1            medium size  full breadfruit

2            2 ½   cups water

3            large carrot

4            tsp salt

5            hard boiled  eggs

1      tsp vinegar

1            small onion diced

1/4   tsp black pepper

2            tbsp virgin olive oil

1            pinch oregano

2            tbsp mayonnaise

3            red and green sweet peppers

1        small lettuce

 

Method

-Peel and dice breadfruit and carrot, then put to boil in water, and salt and vinegar,

   Cook until tender but not mashing. Peel and diced hard boiled eggs

-Strain and add chopped onions, oregano, black pepper and olive oil.

-Add mayonnaise and lightly stir to blend flavors.

-chop ½ of both sweet peppers and add.

-Serve into a salad bowl on a base of crisp lettuce.

- Garnish with sweet peppers.
