Buttons and Bows Summer Salad

It is summer and all those vibrant green, leafy herbs and vegetables are in along with those wonderful juicy ripe red tomatoes. Now is the time to enjoy pasta without that ever popular spaghetti, marinara or alfredo sauce and this one is all chilled and cold and delicious.

BUTTONS and BOWS SUMMER SALAD

Cook, drain and rinse in cold water 1/2 pound of bow pasta according to pkg. directions (Drain completely before adding to vegetable and herb mixture)

While pasta is cooking

In a small mixing bowl combine

4 firm, ripe red tomatoes cut into bite size pieces

1 1/2 cups button mushrooms

1 cup shredded iceberg lettuce

1/2 cup crumbled feta cheese (optional)

1/2 cup arugula leaves coarsely chopped

1/2 cup baby spinach leaves coarsely chopped

1/4 cup basil leaves chopped medium fine

2 Tbsp. chopped ripe olive (black)

1/2 red onion medium fine chopped

Toss together with

1 1/2 Tbsp. balsamic vinegar

1/2 tsp. salt

1/4 tsp. ground black pepper

1/3 cup light olive oil

Toss vegetable and herb mixture with drained pasta.  Cover bowl and refrigerate for at least one hour before serving.

    I love the ingredients in this salad. I am a big fan of black olives and feta cheese, also. This sounds wonderful!
