Cherry Tomatoes, Cucumbers and Avocado Salad

With this delicious, low fat salad who needs ranch dressing?

Cherry Tomato, Cucumber & Avocado Salad

 

Ingredients:

 

About 10 cherry tomatoes

½ large cucumber

1 medium avocado

¼ of a small sweet yellow onion (optional)

¼ cup feta cheese

2 Table Spoons Olive Oil

2 Table Spoons Real lemon juice

¼ teaspoon chopped parsley

 

 

Instructions:

 

Cut cherry tomatoes in half

Slice and dice cucumber

Dice avocado

Dice onion

Toss all these veggies together

 

Mix Olive oil and Lemon juice and parsley in a small bowl.

Pour Olive oil mixture over veggies. Sprinkle feta cheese over salad. Refrigerate until ready to eat.

 

Makes about 4 servings

Weight watchers points about 3 per serving.
