Chick Pea and Cucumber Salad

Fast and easy summer salad, made from Chick Peas, Celery and Cucumbers. Surprising great tasting picnic favorite.

Ingredients

  • One (1) 540mL (29 fl. oz.) Chick Peas, drained
  • Two (2) stalks green celery, diced
  • Two (2) medium-small cucumbers, cubed
  • Half (1/2) large red bell pepper, cubed
  • Mayonnaise

Drained Chick Peas (Garbanzo beans,) Diced Cucumbers, Celery and Red Bell Peppers, and Mayonnaise

Method

In a large mixing bowl, combine the drained chick peas, diced celery, cubed cucumbers and diced red bell pepper (optional) with several tablespoons of Mayonnaise. Blend completely, and chill. Sprinkle dill weed spice (optional, for taste & appearance) over top.

Serve chilled.

Ready to Eat!

A delicious quick and light salad that has protein (chick peas) and Vitamin C (red bell peppers) and tastes great.
