Chicken Potato Salad
A classic dish you’ll probably enjoy.
Try this healthy dish.
Ingredients
- 7 cups potatoes, peeled, diced and boiled
- 2/3 cup peas, canned
- 1 cup carrots, boiled and cubed
- ¼ cup celery, chopped
- 2 cups chicken breast, boiled and diced
- 2 eggs, boiled and sliced
- 1 tomato, sliced
- 1 cup mayonnaise
- 1/3 cup vinegar
- Salt and pepper to taste
- ¼ cup sweet pickles, chopped
Procedure
- Mix potatoes, celery, carrots, pickles, peas and vinegar in a bowl
- Season with salt and pepper
- Place in a refrigerator to chill
- Just before serving, add the chicken and mayonnaise
- Mix well and placed in a salad bowl
- Garnish with slices of boiled eggs, tomatoes and sprigs of parsley

Hi Nobert,
This I have made before and it is a favorite. It is usually a summer meal for us. I took a clue from you and Ruby Hawk and decided to post some of my favorite recipes while I am working on other new posts. I enjoy baking more than cooking a meal so they are for simple easy desserts. See if you like any of them. I have to go and get ready for work. It is a 3-11 shift today and tommorrow. One day I hope to make a living off writing as I am sure we all do.

Sounds yummy – I haven’t tried a cold salad like this before – mainly just the usual potato salad and of course, lettuce. Great for summer – and a good dish to make ahead to take to a barbecue as an extra. That way, everyone gets their daily dose of vegies!
