Chilli, Capsicum Quick Pickles with What You Have in The Kitchen Shelf
Grandma’s pickles have a lot of ingredients and take a long time to prepare. Who has the time now?

Pickles can be made quickly with less ingredients.
What else is tastier than green chillies and capsicum (bell peppers) for pickles?
The following recipes take only three minutes.
So those busy housewives, on with your aprons and get start!
Bell pepper (Capsicum) RAINBOW PICKLE:
Ingredients:
Bell peppers 4 (4cm diameter)red, purple, yellow, green (each 1)
Hot green chilli 1
Juice of 4 lemons ( 2cm diameter)OR
White vinegar 1/2 cup
Mustard powder 4tsps (preferably yellow mustard. if not available, use black)
Salt 3 tsps
Sugar 2 tsps
Oil 3tsps
Cut capsicum into 1cm pieces.Cut green chilli into very thin slices.
Heat oil in a frying pan and add this with sugar and salt in hot oil.
Fry for 2 minutes.
Remove from fire.
Let it cool down.
Add the mustard and lemon juice and mix.
Leave it for a a day. Store in a bottle and refrigirate.
Green Chilli HOTSWEET PICKLE:
Green chillies 200 gms (the big and not so hot types)
Juice of 4 lemons (2cm diameter) OR
White vinegar 1/2 cup
Powdered mustard 2 tsps
Oil 3 tsps
Sugar or jaggery 2 tsps
Cut the stem of the chillies.
Slit the chillies. If you do not like it hot, remove the seeds.
Heat oil in a pan and add the chillies and sugar.
saute for 2 minutes.
Add the salt and fry for a minute.
Remove from fire and let it cool.
Add the mustard powder and lemon or vinegar.
Mix and leave for a day.
Store in a container and refrigerator.
