Chunky Chickpea Salad

This salad is high in fibre and protein and is filling – with a must-have dressing you can use on lots of different salads.

PREPARATION TIME: 15 MINUTES SERVES 4

1 x 400g can organic chickpeas, drained and rinsed

1  baby red cabbage, shredded

2 small avocados, sliced

handful each cashew nuts and pumpkin seeds, toasted

small handful fresh chives, snipped

For the dressing

4tbsp soya yogurt

juice 1 lemon

2tbsp olive oil

Place the chickpeas, red cabbage and avocados in a bowl. Mix together the dressing ingredients with plenty of black pepper.

2  Drizzle over the dressing, top with nuts and seeds and scatter over the chives. Serve immediately.

Per serving: 272cals, 18g fat, 3g saturated fat, 19g carbohydrate
