Chunky Chickpea Salad

PREPARATION TIME: 15 MINUTES SERVES 4
1 x 400g can organic chickpeas, drained and rinsed
1 baby red cabbage, shredded
2 small avocados, sliced
handful each cashew nuts and pumpkin seeds, toasted
small handful fresh chives, snipped
For the dressing
4tbsp soya yogurt
juice 1 lemon
2tbsp olive oil
1 Place the chickpeas, red cabbage and avocados in a bowl. Mix together the dressing ingredients with plenty of black pepper.
2 Drizzle over the dressing, top with nuts and seeds and scatter over the chives. Serve immediately.
