Church Potlucks as a Source for Recipes

Two great recipes from Lebanon and Honduras.

Church potlucks are a great place to sample new dishes and get some great recipes. At a recent event I was able to pick up recipes for these two great dishes. Try them, you wont regret it.

Lebanese Potato Salad

  • Ingredients:

  • 5 lbs russet potatoes – (boil skin on until toothpick slides easily through potato) let cool, remove peel and cut up
  • 1 large red onion – chopped
  • 1 small bunch parsley – chopped
  • 1 handful of fresh mint leaves – chopped
  • 1 cup fresh squeezed lemon juice
  • 1 cup olive oil
  • 1 tablespoon of ground pepper
  • Salt to taste (at least 2 teaspoons)

Method:

  1. Toss and refrigerate until ready to serve.

Honduran Slaw

Ingredients:

  • Cabbage -shredded, or sliced real thing
  • 1 bunch of green onions, finely chopped
  • 1 bunch of radishes, sliced thin
  • 1 bunch of cilantro, finely chopped

Method:

  1. For the dressing combine the juice from 3-4 limes, a tablespoon or so of olive oil, ground cumin (tsp +), salt and pepper. Pour it on the slaw and toss until all is covered, sample and adjust the seasoning as needed.
