Conch Salad Recipe

A popular meal/appetizer in the Bahamas using the shellfish – the Conch.

Ingredients:

1 -2 fresh conchs, diced raw

1 onion diced

1 tomato diced

1 green pepper diced

1 red pepper diced

6 limes (approx)

1-2 goat pepper finely chopped to taste (hot pepper can subsitute jalapeno pepper)

salt

Method:  combine diced vegetables and conch in a large bowl.  Add fresh squeezed lime juice and salt and chopped hot peppers to taste.  Stir to coat all ingredients.  May be served immediately or refrigerated for several hours.

Serving Ideas:  serve in an empty coconut shell as a decorative appetizer for a themed event; serve with a fresh baby green salad for a light lunch; serve with chilled beer and other appetizers for cocktail parties.

Fact:  Many locals enjoy an ice cold Kalik (the local Bahamian beer) with their conch salad.
