Crab Cucumber Salad

On a hot summer day, nothing is as refreshing as a cool cucumber salad. Add a little crab and dressing and you’ve got a light meal.

Ingredients

  • 1 cup imitation crab, flaked
  • 1 medium cucumber, julienned
  • 3 Tbsp. Kraft coleslaw dressing

Method

Flake the crab. You can use a food processor if you like, but a fork works just fine. Set aside.

Slice or julienne the cucumber. Or grate or chop or cut up to your texture preference.

Toss crab and cucumber together and coat with dressing. You can use more or less dressing, depending on taste. Season with salt and pepper.

This pairs well with a slice of crusty Italian bread and unsweet iced tea with mint.
