Crab Meat with Asparagus

Main ingredients are crab meat and asparagus. Served with Egg and Garlic Dressing. Very simple to prepare. Takes about 30 minutes or less. Serves 4-5 people.

Crab Meat with Asparagus

Ingredients:

240 crab meat

10g spring onions, thinly sliced

1 red chilli, finely diced

70g tomato, diced

1/2 green apple, peeled and diced

1 lemon

20 asparagus tips, peeled and blanched

salt and pepper to taste

Egg and Garlic Dressing

3 cloves garlic

2 egg yolks

200 ml olive oil

2-3 drops lemon juice

pinch of paprika or chilli powder

Method:

1. Use pestle to mash garlic, salt and pepper for the dressing in a mixing bowl. Whisk in egg yolks to get a smooth paste.

2. Add olive oil drop by drop and whisk vigorously. Add lemon juice and paprika/chilli powder to finish.

3. In another bowl, combine the crab meat, spring onions, chilli, tomato and green apple. Add a squeeze of lemon juice and season to taste.

4. Arrange asparagus on a plate. Top with crab meat salad. Serve with egg and garlic dressing.
