Cucumber Ring Salad

Fresh Ring Moould Cucumber salad…

Ingredients

  • Gelatin – 1 Tbsp
  • Cold water – ¼ cup.
  • Hot water – ¼ cup.
  • Cucumber – 1, thinly sliced, with the peel.
  • Lemon juice -  1 Tsp.
  • Sugar – 1 Tsp
  • Salt – ½ Tsp

Method

  1. Dissolve gelatin in cold water and then add hot water.
  2. Add lemon juice, salt, pepper and sugar.
  3. Pour in a ring mould and keep aside
  4. When just starts setting arrange cucumber slices over lapping each other and press into the gelatin.
  5. Chill till almost set.

For salad:

Ingredients

  • Gelatin – 2 Tbsp
  • Cold water – ½ cup.
  • Salt – 1 Tsp
  • Sugar – 1 Tbsp
  • Lemon juice                 
  • Paneer – 200 grams, chopped. 1 cup.
  • Cucumber – grated, 1 cup.
  • Cabbage – ½ cup, finely cut.
  • Onion – 1, chopped
  • Mayonnaise’s – 2 Tbsp

Method

  1. Mix gelatin in cold water, add salt, sugar, lemon juice.
  2. Knead Paneer and mix the gelatin mixture, add all the vegetables and mayonnaise sauce. Taste this mixture; otherwise add seasons to your taste.
  3. Then pour mixture in ring mould and keep it in the freezer till it sets.
  4. After that unmould and serve.
  5. For the center decorate with water melon or mangoes, grapes or cherries.
