Delicious California Spring Salad
Preparation time: 15-20 mins
Cooking time: 6-8 mins (pecans)
Ingredients (made for 2)
1/4 cup goat cheese
1/3 cup poppy seeds
Mixed greens, baby spinach
8-10 fresh strawberries
red onion, sliced
1/2 cup pecans
3 tbsp water
3 tbsp sugar
3 tbsp balsamic vinegar
1 tbsp Dijon mustard
1 clove garlic, minced
1/2 cup olive oil
Instructions
Mix pecans, water, and sugar in a small pot until sugar dissolves. Set it to a boil. Once water is bubbling, turn heat down and let simmer for 6-8 minutes. In the meantime, tear off small clumps of goat cheese and roll them into balls. Roll in poppy seeds until completely covered, then store in fridge to harden. Transfer pecans into separate container and put in fridge to cool. Mix balsamic vinegar, mustard, and garlic together. Stirring constantly, slowly pour in olive oil. Rinse off mixed greens and baby spinach, and slice strawberries and onions. Serve salad in two bowls; divide pecans and goat cheese evenly. Use dressing sparingly.
