Delicious Fruit Flavored Yogurt and Fruit Salad

Want to make a healthy fruit yogurt or fruit yogurt salad that’s better than the super market brands? This recipe is easy and simple, will save you money, and provide more nutrition than the fruit yogurt you buy commercially!

Preparation Time: 15 Minutes

Cooking Time: 5 Minutes

Serves: 4 – 6

Ingredients

To make just a fruit yogurt begin by stewing your choice of apples (granny smith or macintosh) with cinnamon to taste (2 apples peeled and cut into bite sized pieces) cook until soft, blueberries (2 cups), Raspberries (2 cups), strawberries (2 cups cut into small pieces), or other fruits suitable for making jam such as cherries, apricots, or peaches.

  • Juice of one lemon
  • 4 tsps of sugar or 4 packets of sugar substitute (recommended)
  • 1 tbsp corn starch dissolved in about 2 oz of cold water
  • 750 ml plain yogurt

Method

After the fruit, lemon juice, and sugar have boiled for about 5 minutes (stir occasionally) add the corn starch mixture and stir until it thickens. Remove the cooking pot from heat and place it in cold water to cool the sauce down, stirring it occasionally. When the fruit sauce is close to room temperature add the plain yogurt and mix well. For best results refrigerate for at least an hour before serving.

For a delicious fruit salad use the fruit yogurt and add to it:

2 kiwi fruit peeled and diced

2 mandarin or minneola oranges separated into slices and cut in half  (You can substitute an equivalent amount of grapes, cut in half)

1 banana cut into bite sized pieces

You can experiment with your own combinations of fruit of course but I don’t recommend plums or hard fruits. Plums actually taste bitter in a salad and hard fruits create an unpleasant texture. The fruits I use above seem to go well with all the different fruit sauces I have tried.
